Easy almond flour pancakes ( gluten free )


1 1/2 cup almond flour
5 eggs
1 tablespoon honey
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon GF baking soda
1/2 cup rice flour

1 mix ingredients in a bowl.
2 cook on well-greased pan on medium heat.
3 add maple syrup whipping cream fruit salad

        My apple was sooooooooo
        good. It all started when I got
        hungry so I ate an apple. I was
        feeling creative so I made a
        smiley face with my thumbs. I
        named it Red Fred.So good! :)

Lemon meringue Pie

                                                                                                     lemon

11/4  cups white sugar
6 tbsp corn starch
11/2 cups water
3 egg yolks
2 tbsp butter
3 cups lemon juice


1 preheat oven to 425F. place A sheet of plastic
     wrap on a work surface and place the dough on it cover with another sheet of plastic wrap. roll out dough to about a 121/2-inch circle. transfer into
9 inch pie plate. trim dough.

2 prick the bottom of the pie lightly with the lines of a fork.
bake for 10 to 12 minutes or until golden brown. set aside.

3 in medium pot combine sugar, cornstarch, and water.
cook over medium heat until thick and bubbling. reduce to low heat
and simmer for an additional 2 minutes.

4 remove pan from heat. in a small bowl, whisk egg yolks until combined.
slowly whisk 1/2 cup of the hot filling into the yolks stir yolk mixture back into the pot.
cook for about 2 minutes stirring frequently. remove from heat, stir in butter
add lemon juice slowly, mixing well.

5 pour hot filling into prebaked piecrust.

6 Allow to cool thoroughly in the refrigerator
                                               
7 top with meringue place pie under broiler bake until brown, about 2 to 3 minutes.
 watch pie closely this step goes quickly!                                                                                                                                
      meringue          
      4 egg whites
      1 cup sugar

    1 in the top of a double boiler set over
    simmering water, combine egg and sugar.
    whisk egg whites until sugar is dissolved
     and mixture is hot.                                                     
                                                             

    2 Transfer mixture to an electric mixer                          
    and whip on high speed until smooth and

healthy breakfast crepes


1 egg
1 tbsp gluten free Brownie mix
1 tbsp soy milk or water
1 tbsp vegan butter
4 strawberries
1/4 cup compound chocolate chips



get a small bowl and whisk the egg
add milk and brownie mix.
in large frying pan melt butter.
 add batter wait four bubbles to form in the middle. flip crepe cook other side.
serve with strawberries and
melted chocolate.

My gluten free bread

This recipe is inspired by  Bette Hagman's The gluten-Free Gourmet Bakes Bread book
Basic Featherlight rice bread recipe

3/4 cup rice flour
3/4 cup tapioca flour
3/4 cup cornstarch
1 tbsp potato flour
1 1/2 tsp Xanthan gum
1 tsp Unflavored gelatin
1 tsp egg replacer
2 tbs sugar
1/2 tsp sea salt
1/4 cup soy milk powder
2 1/4 tsp dry yeast

mix and add wet ingredients

2 eggs
3 tbsp vegan butter
1/2 tsp balsamic vinegar
2 tsp maple syrup
                          
Mix wet ingredients in too dry.
While mixing add 1 1/2 cups warm water until its like cake batter.
Mix in mixer for 3 1/2 minutes.
Grease bread pan with butter and sprinkle with rice flour.
Pour into pan and let rise for 1 hour or until it doubles in size.
Bake at 400 degrees for 10 min then cover with aluminum foil.
Bake for another 40-45 minutes.
 
Abbygail's tips
When you take it out put the pan on a cooling rack on its side to stop it from flopping. 
You can flip it to the other side after 10 min.
After 10 minutes on that side take it out of the pan and leave it to cool on its side.

I suggest you slice it ( after cooled completely) and put it in the freezer to keep it longer and fresher.

This bread tastes out of this world :o)

granola cookies




















2 cup of oatmeal
1 cup of gluten free rice krispies
1 cup of rice flour
1 egg
1 cup of peanut butter
1 cup of maple syrup
1tbsp of vanilla
1/2 of cup chopped apricots
1/2 of cup ground almonds
1/2 cup sunflower seeds
1/2 cup compound chocolate chips
1/2 cup craisins

Preheat oven to 350
Put everything in a large mixing bowl.
Mix and scoop into cookies on a cookie sheet.
Bake for 10-15 minutes.



We made granola bars all in the same recipe.
The only thing different is that we put it in a square pan.
and we cut it after it cooled.

My favorite is the cookies.
But i loved the granola bars too.

Valentine Hearts









2 cups rice flour
1 tbsp sugar


1 tsp salt


1/2 cup non-hydrogenated shortening


1 tsp apple cider vinegar


1/2-3/4 cup very cold water


2 granny smith apples


2 tbsp brown sugar


1/4 tsp ground cinnamon


berry jam


olive oil





Preheat oven to 425 f


Mix flour,sugar and salt.


Add shortening slowly until crumbly.


Mix vinegar, water and add to flour in 3 batches with a fork until dough holds together.


Kneed the dough and shape in to a ball and flatten to a disk.


Put in refrigerator for 30 minutes.


Slice apples VERY THINLY and grease baking sheet.


Roll dough until 1/4 inch thick.


Cut hearts put hearts on baking sheet.


Roll edges of hearts spreed a tsp of berry jam on each crust.


Put apples on hearts.


Drizzle brown sugar mixture.


Put in oven to 25-30 minutes
